A lot of bloggers partake in what’s been deemed “Meal Plan Monday.” For us, this doesn’t really make sense. We plan our meals on a Saturday-Friday schedule, because it best aligns with our shopping. But we spent this past weekend in New York visiting friends and celebrating St. Patrick’s Day, so Meal Plan Monday it is! We kept it really simple this week to keep the grocery bill down and because we have a friend in town next week, which will mean more elaborate meals for our guest.


  • Bubble up enchiladas with green beans
    (This is recycled from last week. The Mister and I were not feeling a big meal last Friday night, so we had a yoyo night instead.)


  • Chicken Caesar salad with breadsticks
    (Pretty basic one here. Throw a chicken breast on the George Foreman grill, add some lettuce, parm, croutons, dressing. We have a few Olive Garden breadsticks left from last week’s Italian night.)


  • Yoyo
    (The Mister has a standing Wednesday afternoon meeting and then night class.)


  • Vegetable stir fry with orange sauce and brown rice
    (Pretty simple again and we had most of this on hand. Broccoli, snow peas, carrots, red pepper, onion, water chestnuts + bottled sauce + rice = dinner.)


  • Balsamic roasted pork with garlic mashed potatoes and salad
    (The Mister made this marinade with pork loin a few months ago and it was quite good. And I don’t really like pork much. So he’s going to make it again with some cut of pork … chops I believe? We’ll add some creamy from-scratch mashed potatoes and a basic salad.)
